I know nothing about books, but in my two second google search, I came upon this story:
"...the little boy takes the rings up the aisle, but every few steps he turns around, makes a ferocious face and growls at the crowd. The crowd laughs hysterically but no one understands. Later, when he's asked what he was doing, he seriously answers, "Being the ring bear!"
OMG, you jogged my memory about a Mr. Rogers episode on just this: I think it was Daniel Striped Tiger who was so afraid of being the ring "bear". Wonder if you could find that in the library?
I don't have any book suggestions, but (although I'm sure you've thought of this already), will there be a rehearsal?
Reason I ask is because you could do a rehearsal for the rehearsal at the nephew's house with familiar people, roughly blocking out what it would be like. So that way, by the time he gets to the actual wedding, third time is likely the charm!

Um, and I do like the Berenstain Bears! I remember them from their magazine appearances when I was a little girl.
