Cranberry-Pecan Muffins
1 cup white flour
1 cup whole wheat flour
1 cup chopped pecans (walnuts may be substituted)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/4 cups low/non-fat vanilla yogurt (approximate)
2 tbsp vegetable oil
1 tsp orange zest
2/3 cup dried cranberries
Preheat oven to 400 degrees F. Combine flours, pecans, baking powder, baking soda, and salt in a bowl. In another small bowl combine yogurt, oil, and orange zest. Add liquid ingredients and cranberries to dry, stirring until just combined. If the mixture is too dry, add yogurt until it has a spongy consistency. Place into a muffin tin and bake for 20-25 minutes, or until brown. Insert a toothpick to test; if the toothpick comes out clean, they're done.
Went to a walk-in clinic and got a referral to a psychiatrist. Talking to the nurse and doctor at the clinic about specifics I've trained myself never, ever to mention out loud was the most difficult thing I've done in a long time; I couldn't stop shaking for an hour or so afterward.
I'm afraid of what may happen and what may not happen, but it's something, at least. Something is always better than nothing, right? The only issue is the expense, and my own lack of courage.
Miss everyone fiercely. The summer feels bleak now that the anticipation of being together with them all is gone.
