Instead of drinking, I make alcoholic cake.
1 cup guinness
1/2 cup and 2 tbsp butter
3/4 cup unsweetened cocoa powder
2 cups sugar
2 eggs
3/4 cup sour cream
1 tbsp vanilla
2 cups flour
2 1/2 tsp baking soda
Preheat oven to 350 degrees F. Butter a 9-inch springform pan. Combine butter and Guinness in a large saucepan. Heat over medium until butter melts. Whisk in sugar and cocoa powder. In a small bowl, combine eggs, sour cream, and vanilla. Whisk sour cream mixture into guiness mixture. Whisk in flour and baking soda. Pour mixture into pan and cook for 45 minutes to one hour, until a knife inserted in the center emerges dry. Let cool in pan for several hours until completely room temperature. Pop the cake out of the pan's sides and put it on a plate or platter.
icing:
1 1/4 cups powdered/confectioner's sugar
8 ounces cream cheese, room temperature
1/2 cup whipping cream
Beat cream cheese until soft. Beat in powdered sugar until combined. Beat in heavy cream until mixture is spreadable. Spread over the top of the cake in a foamy way if possible.
