Zesty Grilled Corn Salsa

4 Yellow corn

1 Red Bell Pepper, halved and seeded

1 small onion

1/4 chopped fresh cilantro

2 tbsp. fresh lime juice

1 tbsp. olive oil

1 tsp salt

1/2 tsp ground red pepper

1) Grill first 3 ingredients on a lightly greased grill rack over medium-high heat for 10 minutes or until tender, turning occasionally. Remove bell pepper and onion and set aside. Grill corn 10 minutes more until tender. Cut corn from cob and place in a bowl.

2) Place bell pepper in a reseable plastic bag; seal and let stand 10 minutes to loosen skin. Remove charred skin.

3) Chop bell pepper and onion and add to the corn. In a small bowl combine cilantro and the last 4 ingredients; toss with vegetables to coat.

Let rest for about 2 hours. Serve with tortilla chips.
