Tofu Burgers with the Works

1 (16 oz) pkg extra firm tofu, drained and cut horizontially into 4 half inch think slice or "burgers"

1 bottle or 8 oz of yummy vinaigrette salad dressing

4 onion rolls or hamburger buns split

1 ripe avocado, pitted and peeled*

1/2 cup light mayo

8 oz pkg sharp cheddar cheese slices

8 tomatoe slices

4 good size romaine lettuce leaves

4 slices of red onion

1. Place tofu and dressing in a resealable plastic bag. Seal, gently shake to coat. Chill in refrigerator for 30 minutes. Drain reserving 2 tablespoons of dressing.

2. Grill tofu on a lightly greased grill rack over medium high heat for about 5 minutes on each side or until completely heated. Grill buns, split-side down until toasted.

3. Mash avocado in a small bowl until smooth. Add reserved dressing and mayo, stirring until blended. Spread evenly on split side of buns.

4. Place tofu, cheese, tomato slices, onion and lettuce on bottom half of buns. Cover with tops. Serve immediately.

*To keep the avocado from turning brown, rub a bit of lemon juice on.

Enjoy with a nice bowl of vegitarian baked beans.
