I can't believe it's August already!! Ok my apologies for not getting back here sooner.
Ok here is the first Polenta recipe. It's a basic, cheap and very tastey morsel. All that is needed is:
9 Cups Cold Water
2 Tablespoons Salt
2 Cups of Cornmeal
That's your basic Polenta recipe. The secret to this, is to very very slowly pour in the cornmeal. You have to stir slowly, consistantly as you pour the cornmeal into the salted water. It takes approximately 25 -30 minutes for it to be cooked. You must however continually stir or it will burn. Once cooked it will be soft, and it's so yummy topped with your favorite cheese, sauce, veggie or all of the above!
If you prefer firm polenta, pour the cooked polenta onto a board and allow to cool, then cut into desired slices. I've even used a cookie cutter, for some really cool shapes.
My next recipes will be baked, grilled and fried polenta. If you like tofu, you'll love polenta. Mangia!
