Cookies of the Week: Brown Velvet Sandwiches

Brown Velvets





These cookies started life as red velvet cookies with cream cheese frosting. Then I realised that I didn't have the required 2 TBSP of red food colouring to make them red. I added what I had, but alas, baker's chocolate is a mighty brown mistress. Plus, when I added the required mini-chocolate chips, they became studded with chocolate goodness. They're fantastic cookies, but not very red. They have a very soft, cakey mixture. As I wasn't sure about the transport of cookies with frosted tops, I frosted the centres and made gob-like babies. You can feel free to unscrew them and share, or just shove a whole one in your mouth (they're a little big for that, but I should not judge).

Ingredients: COOKIE (unsweetened baker's chocolate, butter, brown sugar, white sugar, baking soda, salt, eggs, flour, red colouring, sour cream, semi sweet chocolate chips); ICING (butter, cream cheese, vanilla, powdered sugar)
