Sunchokes
A feeling of coming full circle - some of the first "weird" (new-to-us) veggies we got in the spring.
The big orange squash that looks somewhat like a pumpkin made a yummy cake with cream cheese frosting. My coworkers are still talking about it. And Leah has refined her baked sweet potato fries to be fabulous - apparently the secrets are 1) not letting them touch AT ALL on the baking pan and 2) serving with the same dip we use for fried plantains (ketchup, mayo, and garlic).
I can't believe the next delivery will be our last! But, at the same time, I have actually found it hard to use all the fall veggies, because school has been so exhausting and I haven't wanted to cook. We do have a few items put into the freezer to use after the deliveries stop - I wish we had a larger freezer so that we could keep more, and order meat from them too.
