Shio ramen
I am really loving the hunt for the perfect ramen here in Singapore. Till date, the black pig ramen from Tampopo and the white pork bone soup ramen from Sapporo Ramen Miharu at The Gallery Hotel are my personal favorites.
The extra egg that we added to the ramen was a good compliment - I love the semi-solid yolk that has a lovely taste and bite to it. I have been selecting Shio ramen instead of miso or shoyu . The broth for this one was a bit too oily and thin although the noodles had a fairly good bite to it. I still prefer the type of ramen that doesn't taste so much like wanton noodles! And the soup should be thick and white and sweet. The noodles actually reminded me of the ones from Marutama Ra-Men (the outlet at Central that serves the noodles in chicken broth).
So I won't say that it is bad. It's tasty actually. But not the kind that I like. Oh but the gyoza is pretty good though.
