Orange Spice Granola with Cranberries

Orange Spice Granola with Cranberries

Dry
4 cups of thick cut oats
1/4 cup wheat germ or ground flax seed
1/4 cup hemp or chia seeds
1 cup chopped pecans
1 cup dried cranberries

Wet
1/2 cup brown rice syrup or honey
1/4 cup safflower or olive oil
1/4 cup orange juice

PLUS

1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp salt
1 tsp vanilla extract
1/3 tsp almond extract
2-3 tsp orange zest

Pre-heat oven to 300. Mix together all of the dry ingredients except for the cranberries. Put everything else (wet ingredients and the spices) in a small sauce pan and heat over medium heat until mixed thoroughly, stirring constantly (about 3-5 minutes). Mix wet into dry until fully incorporated. Spread on parchment paper on a rimmed baking sheet and bake for 1 hour, stirring every twenty minutes. Add the cranberries in for the last twenty. After the full hour, pull from the oven and allow to cool COMPLETELY. I usually spread it out on a different, cold baking sheet... it seems to cool faster that way. Once completely cooled, store in an air tight container or large ziplock bag in the fridge.

This recipe comes out quite subtle, as far as the orange flavor goes. Subtle, but definitely there. To go a little more orangey, try adding another teaspoon of orange zest, or maybe even some orange oil if you want to get crazy.
