And They Were All Yellow...

The other week, I had a craving for comfort food - you know, the kind that you want to just cradle in your hands because it's warm and it smells nice and you can watch TV while eating it. I had a small bag of yellow russet potatoes in the fridge, washed and clean, and I initially wanted to do mashed potatoes, but I Googled around and discovered potato casserole instead. I don't recall the exact site where I found it, but it's incredibly simple and satisfies the definition of comfort food. :)

Potato and Cheese Casserole

Ingredients

6-8 medium yellow potatoes, peeled
1 chicken cube
Milk
Butter
Salt and pepper
Grated cheddar cheese
Crispy bacon (I used beef bacon because we're a no-pork household, but obviously it's your choice of meaty, fatty poison)

Steps

1. Pre-heat your oven to 160 degrees Celcius.

2. Boil your potatoes with the chicken cube in the water. Check the potatoes with a fork to see if they're soft enough to mash.

3. Once they're soft, drain the potatoes and pile them in a mixing bowl. Sadly, since we didn't have a potato masher, I used a fork and massive amounts of elbow grease to mash the damn things. Add milk and butter to your liking. I use about 1/4 of a cup of milk and a couple of tablespoons of butter. Season with salt and pepper.

4. Once the potatoes are mashed, add your cheddar cheese and bacon and mix the entire delicious heavenly thing together. Try and stop yourself from dipping your finger into the concoction and sneaking bites in between.

5. Line your baking tin with baking paper to stop the potato mix from sticking to the bottom of the pan. Pour the entire mixture in and pat it flat.

6. Bake it for about 15-20 minutes, or until the top turns golden.

7. Once it's done, remove it from the oven and let it cool for a bit. Slice it the way you would a cake, and then serve. You can add some sour cream on the side, or more cheese on top. I just enjoyed it the way it is. :)
