Fandom Food: Caramel Cheesecake
Everybody knows the Golden Girls always had a cheesecake near. Nobody, on the other hand, knows exactly how many problems these four fabulous ladies resolved or at least discussed around a cheesecake. They often bought them, but I bet they could make wonderful cheesecakes themselves. I also can easily imagine them liking caramel, -- and I’m sure Blanche had a good use for it in her boudoir!
The recipe is simple and one I’ve used before: Mix together 16 ounces cream cheese, 1/2 cup sugar, 1 1/2 cups or 12 ounces caramel Hershey's ice cream syrup, and 2 teaspoons vanilla. Pour into a prepared (or bought) pie crust. Bake for about an hour at 350 F. I believe this recipe does need a little bit of flour added to it, however, as the filling remains runny even when the top is done. It requires further experimentation which requires further cheesecakes made and eaten -- which I’m sure the Golden Girls would happily approve of!
