I am going to write down a recipe before i forget it, and you should all try it because it is DE-LISH!
yummy carrot salad
so this morning i found some carrots in my fridge that only had a few days left in them and decided to get a little crazy. i cut the carrots into chunks, about 1/4 inch, and boiled them for about two minutes, just long enough to make them a little soft. during that two minutes, i made the following marinade:
soy sauce
olive oil
"lemon juice" (i actually used the 'simple mojito' mix from whole foods that was in my fridge because i had no lemon juice. don't judge, it was awesome. i'd even recommend adding some lime juice too if you have it because it was so bomb).
sugar
cinnamon
cayenne pepper
garlic salt
sea salt ( i loves the salt)
powdered ginger
cumin
no, there are no measurements. just make to taste, and in the amount you need for how many carrots you have. this is how i cook.
okay, so then i drained the carrots super well and mixed them in the marinade. THEN, i added a handful of raisins. i know it sounds crazy, but just go with it. some nice tart apple chunks would work well too i think, maybe better because raisins are a little autumn-y. i mixed it all up really good, stuck it in the fridge for about three hours, and just pounded the whole bowl. so refreshing and tasty! make some as soon as you can, if you like carrots and goodness!!!
