Mike and I used to live there, and Spring is an absolutely lovely time to go there -- everything is in bloom! Mike adored a deli near the old college and colonial area called The Cheese Shop. I was much more into photography and the Folk Art Museum (housed in the old insane asylum), but I was also a tour guide in Colonial Williamsburg, so I do know the area pretty well. One thing, though -- Williamsburg is damnably hard to navigate. Few streets run in straight lines, and those that do meet each other at weird angles. It isn't unusual for a road to change its a couple of times and intersect with itself. So you DEFINITELY want to get a good map.
There is an old movie theater on Merchants' Square (where all the good shopping and dining is) called the Kimball Theater that shows indie and arthouse films. Also, depending on the weather, a ride on the Jamestown Ferry might be nice. The archaeological digs and exhibits at old Jamestown are interesting, too

The yelp link for it. They warn about lines. It was very popular when I was there (2001) and appears to have become more popular. I compensated by eating off hours (like 3 pm lunches).
Aw, lucky you. My alma mater (William & Mary) is there and I haven't been back since I graduated 15 year ago!!!
Definitely go onto campus and try to get into the Christopher Wren building (at least the chapel) if you can, sunken gardens, Lake Matoaka has some nice walking paths, do all the kitschy colonial stuff on DOG (Duke of Gloucester) street, of course. Take a side-trip over to Jametown, it's worth it.
I'll make it down to North Carolina sometime, and we'll have to meet up! (Mostly we go to the Outer Banks area, though... so it'd still be a distance for a meet-up)
I was there last summer for a convention. We didn't get to see much of the area though because of the convention, but what we did see of historical Williamsburg and Jamestown were pretty interesting.

Busch Gardens is good. That's about all I remember...I've been there so many times it's a blur. I think it was Jamestown I liked a lot.

I've never been to VIMS, though I did think about applying there for graduate school. (The advisor I wanted to work with didn't have any openings).

If I lived closer, I'd totally drive up and meet you there. I've only been twice, and I think both times were to go to Busch Gardens.
