Sweet Potato Yumminess

Had the usual gathering yesterday, great fun for all. And the yummiest parts were the sweet potato dishes. On Wednesday night, I made sweet potato and zuchinni latkes, which were fabulous, and then on Thursday I rescued some 'less than the best' sweet potatoes from icky oblivion, resulting in the following recipe:

3 lbs sweet potatoes, baked, skinned and chunked
2 lbs apples, peeled, cored and sliced
1 tbsp fresh ginger, grated
2 tbsp butter (yes, real butter! its worth it!)

Mix in a buttered pan, cover with tin foil, place in a 350 degree oven until the apples are soft.

Serve!

Total yumminess.....

And my tip for improving pumpkin custard--use the pie recipe on the pumpkin can, but use brown sugar instead of white, and fresh grated ginger instead of powdered. It makes it taste so much better. I could eat another whole one by myself. In fact, if I halved the sugar, that might make a fabulous meal.
