Crab Cakes

In a large bowl, mix 1 lb. crab meat, 1/4 cup diced onion, 1/4 cup diced red bell pepper, and 1/2 cup bread crumbs.
In a separate bowl, beat 1/2 cup mayo, 1/4 cup cream cheese, 1 tbs. dijon mustard, 1 egg, 1 tbs. dried leaf tarragon, 1/8 tsp. cayenne papper, and 1/8 tsp. salt.
Stir mixtures together.
Cover and refrigerate 30 min.  
Form mixture into patties.  Coat evenly with additional bread crumbs.
Heat 2 tbs. veg. oil in skillet on medium heat.  Fry in skillet untili golden.
Makes 24 cakes.
