Corn Chowder was really good. I read some reecipes, but then played it by ear.
4 medium potatoes, peeled and in 1/2 in dice
4 cups frozen corn
6 slices thick sliced bacon, diced
1 medium onion, diced small
1 tbsp butter
3 tbsp flour
3 cups milk
1 cup half and half (I used 1/2 and 1/2 because I had 2% milk, 4 cups whole would probably work)
salt
pepper
I did this in one pot, you can use multiple pots if you like. :p
Add enough water to pot to cover potatoes, salt the water and put on high heat for 10 minutes. The potatoes should be at full boil now, add in corn and cook for 8 or 9 more minutes. Drain corn and potatoes and set aside. (I washed the pot). Fry the bacon pieces until crisp, remove from pan to drain, leave dripping in pan. Add onions and butter (I added extra butter to make fat appr. 4 tbsp). Sweat on med low until soft. Add flour, cook a couple of minutes. Add milk and cream, cook for a few minutes until thick. Do not boil. Adjust seasoning (I added some Lawry's Season Salt and nutmeg until it was just right). Add corn and potatoes back in and bring up to heat. Garnish with the bacon pieces.
