I made this for my little brother after he mentioned pondering watching The Dragon Prince. It is thus aimed at his kinda mainstream tastes but thought I might as well post it here too.
It was weird writing a rec for She-ra for someone for whom "It's full of queer women" is not worth mentioning one way or the other haha.
Full rec:
She-ra: aimed at kids and a bit silly to start but quite good sci-fi/action/drama/comedy if you can handle some cheesy Princess Power.
Full Metal Alchemist Brotherhood: I think you many have already seen this? Reccing it again anyway :D Steampunk anime.
Russian Doll: Twisty time loop comedy/drama about being a messed up 30 something.
Dirk Gently's Holistic Detective Agency: Very fun scifi-fantasy with a lot of time travel and plot twists and surreal humour. I didn't like the sound of season 2 so stopped after s1.
Wynonna Earp: Possibly a bit cheesy for you. Kinda like Buffy, except she shoots undead cowboys.
Anime on Crunchyroll while I'm here:
Mob Psycho 100: surreal and darkly humourous but eventually really heartwarming story of a shy teen boy with massive psychic powers. Great action sequences.

3 Below: aliens living in disguise in US suburbia
The Witcher: Fantasy epic.
Stranger Things: 80s nostalgia scifi drama. You may be too young for the nostalgia ;) [he was born in 1986]
Mixed feelings:
Red vs Blue: Dumbass scifi dudebro gamer comedy set inside the first person shooter Halo, gains plot and characterisation as it goes.
The Dragon Prince: kinda generic fantasy made by some of the same team as Avatar, didn't click for me.
Voltron: Moderately enjoyable Space Battles In Giant Robots made by some of the same team as Avatar. I got bored 2 seasons in and most people didn't like the finale (of season 8, apparently season 7 is a nice place to stop)
