You've met Carrie Fisher?! Colour me jealous. I fully understand the obsessive appeal of SW though. The original trilogy has always been like a religion for me ;) And the books - my shelves are groaning under the weight of them all!
Then you simply have to read the first Timothy Zahn trilogy:
1. Heir to the Empire 2. Dark Force Rising 3. The Last Command
Still my favourites of all the books. Tied with the pre-movie trilogy that was written about Han Solo by A. C. Crispin (the books are called 'The Paradise Snare', 'The Hutt Gambit' and 'Rebel Dawn').

My suggestion would be to start with The Truce at Bakura and The Courtship of Princess Leia because they pick up where ROTJ leaves off, and are both excellent.
