The black moa has a whole complicated story. The adult bird only appears after you do a whole chain of quests. Later on there is a quest to acquire a chick. The chick is actually not a tameable animal, it's a miniature or vanity pet that just accompanies your character and does nothing but looks cute. Because they created a special model for the chick, they use it in the menagerie. All the other baby animals are just shrunk down versions of the adult. That's why the chicks don't have tiny spike collars.
