I have vowed to eat a salad a day.
Today's salad is a favorite of mine:
Sandwich Guts
1 cup grated or thin sliced iceberg lettuce or spring mix, or greens, etc.
1/2 a tomato, diced
1/4 cup mixed onion and green pepper, diced
1/4 cup cucumber, diced
1/4 cup dill pickle spears or chips, diced
1 tbsp. lite mayo
1 tsp. yellow or Dijon mustard
Salt & pepper to taste
Toss ingredients together, serve cold. Add any other vegetables as desired. This recipe is called "sandwich guts" because it is like the toppings of a deli sandwich. Dice or slice deli meat or cheese and top. I also prefer iceberg for this salad, for the crunch. And, I add shaved carrots to mine, because I love carrots.
