IMNSHO if you are using smoked salmon, which I would have suggested if you hadn't mentioned it, I don't think you can mash it then make it into the balls. Then boil.
I always love to see food entries, and while my personal preference is for late period Italian I'm always terribly impressed with food research going back this far.
There are a couple of Laurels out here that do amazing norse food reconstruction. One couple has a stone hand mill that they've made and another has an entire Norse encampment done to the 9's. :)
I'd love to see their research, etc... I've got some late period Italian recipes, and am pretty comfortable translating and redacting. However this was a totally new experience for me. I love to read other people's projects, so I am glad that this was fun for someone else to read.
