Challenge: How do you make a spinach omelette when there are not enough spinach in your backyard?
Nelly, Dad's maid, was about to make breakfast this morning when i caught her scrambling some eggs to make a plain omelette. With all the rains in the last two weeks, apparently, her herb garden in the back of my Dad's house was so wet for spinach to grow nicely. There wasn't enough to make even a six-egg spinach omelette without having to pinch all the spinach leaves off of the plants. Upon inspection, I noticed that sweet potato greens were growing nicely and in abundance. After gathering enough to make about 4 oz. of this, I washed them briefly and tossed them in the microwave for 2 minutes just to wilt. Squeezing every ounce of water off was a quick work with a paper towel. Heated non-stick 8" pan with some olive oil, I was ready.
The gorgeous yellow/brown omelette looked great and appetizing. My Dad devoured his fourth (after I served it in quarter wedges) with fresh brewed coffee and toast. My Mom passed off on the offering for a plate of stir fried rice seasoned with flakes of smoked fish (tinapa) and some dried inch long fish from Taal Lake called Ayungin. My chtef husband loved it!
I'll have a few more breakfast ideas that I'm hoping my Mom would finally try and enjoy. At 79 yrs.old, she is hard to impress now. All those years of fine dining around the world boiled down to this for her: a cup of sinagag (fried garlic rice) and tuyo (dried fish lightly sauteed in oil) dipped in vinegar and chili.
Maybe, if I ever get her age, I might just love a good sweet potato greens omelette and toast with a side of tuyo as well. LOL.
