i love sundays.
they're a lazy sort of day, which generally equals cleaning and cooking in my world. cleaning? not so much, but cooking! i look forward to sundays to cook and bake and experiment in my kitchen.
adam requested spaghetti and meatballs. and nothing fancy. (damn!) i buried my nose in my cookbooks, and decided to make rigatoni with meatballs from my beloved silver spoon cookbooks. rosemary is one of my favorite herbs, and the recipe called for it, so i was sold!
i love grocery shopping more than most people, so after i wrote out my list (yep, i'm a grandma), off to giant eagle i went! i decided to be extra adventurous and buy ELEPHANT GARLIC!! it was so exciting!
the pasta was amazing. i found cute little mini ravioli to go with the sauce in lieu of the rigatoni, cause rigatoni is pretty boring if you ask me!
in true italian fashion, i made too many meatballs, so i decided to use half of the batch in the sauce, and fry the other. nana always made fried meatballs and they're absolutely delicious! mine weren't cheese-y enough or used bread, so it wasn't as good, but good none the less!
adam gave me a 7.8 out of 10, which was pretty great from mr. picky husband.
for dessert? white chocolate oreo balls! (and noticed i had a balls theme of sunday dinner going on. oh well!)
i just whipped a package of cream cheese, a little vanilla extract, about a half of a cup of powdered sugar, and one row of oreos.
i tossed them in the fridge to harden a little, made them into balls and stuck a toothpick in the middle, then popped them in the freezer.
then, in a double boiler, melted some white chocolate (or dark, or anything you want really!) and dip the butts of the balls in the chocolate and put them on parchment paper and back in the freezer to cool the chocolate.
