Right, I know you can't really see the mushrooms underneath as they shrank in the oven, but this is what I had for dinner nevertheless. I sauteed some red onion and red pepper, then mixed them with green olives and chopped sun dried tomatoes, poured it into two large mushrooms and put them in the oven. Whilst they were baking, I made a mixed veg side dish with beetroot, mangetout, cherry tomatoes, celery and horse radish, a dash of soy sauce and Tabasco. Yum!
