1 (10 oz.) pkg. frozen broccoli
1 (14 oz) can chicken broth (or vegetable broth)
1/2 tsp of basil
1/2 tsp of onion powder
1/2 tsp of thyme
1/4 tsp of paprika
shredded Cheddar cheese (optional)
Empty frozen broccoli, chicken broth, and spices into a medium saucepan; cover and bring to a boil over medium-high heat. Transfer hot mixture to a blender and blend until smooth. Garnish with shredded Cheddar cheese if desired.
For a richer version, stir in a couple of Tablespoons of sour cream.
Other variations include: Corn and chili powder, cauliflower and curry, winter squash with pumpkin pie spice, peas with mint.
