I really like making stratas - they do take longer than no time, but you can prepare most of the stuff the night before in a pyrex glass serving dish and just pop it in the oven for however long it takes too cook. Plus, it freezes really well so you'll have no minute dinners later on if you pull it out of the freezer the night before and just warm it up in the microwave!

You could easily substitute bacon for the pancetta! Or use bulk sausage or something of the sort.

Also, Salads are awesome! Plus you can make your own balsamic vinaigrette with just two parts olive oil, one part balsamic vinegar, some salt and pepper! And you can always mix in any veggies/fruits you want.

Ooh also - if you have a slow cooker, I'll send you a really great chicken noodle soup recipe which freezes well (without the noodles) and is really nummy!

Also - pretty much anything with potatoes is going to be pretty cheap. You could also just try to steam veggies and saute in some browned butter and salt - it's always pretty good! I didn't used to like broccoli, but I'm a fan of it like that!

Oh yeah ! and leftover chicken - I like to make really fast quesadillas - you cut up a bunch of onion and heat in an oiled pan with cumin and coriander - add the leftover chicken and then just put it in tortillas with cheese on a sprayed baking sheet (spray the top a little bit too) on like 350 for like 10 minutes. They're really crunchy and delicioussss. Plus you can make a quick guac out of an avocado and onions and stuff while it's baking.
