I didn't know you were a veggie--have I not been paying attention again? Doh.
Anyway, so.
Black Bean Dip-- Note: I found this recipe in Cooking Light when I was in college... over ten years ago. I still make it all the time. It's perfect as it's intended dip (best a little warm or room temp, but still good cold), but it makes an AMAZING filling for tacos/burritos/enchiladas. It's like the perfect food for real. When I was a vegetarian, it was definitely one of my most relied upon recipes. It's ALWAYS a crowd-pleaser at parties, too. Also know that I'm giving you exact measurements, but I've long ago forgone them... I just eyeball almost everything now. You can't screw it up.
1 can black beans (slightly drained) 1/3 cup onion, chopped (white or yellow work best) 1 large clove garlic, minced 1/3 cut chopped fresh tomato (I usually just use a whole roma tomato) 1/3 cup jarred or fresh salsa (here in Texas, it's not unusual to have fresh around in the summertime, but jarred is just fine) 1 tsp. chili powder 1/2 tsp. cumin handful of cilantro, chopped juice of about half a lime 1/3 cup shredded jack cheese (really, you can usually just use whatever cheese you keep around... I have jack/colby most of the time. If you're vegan, you could probably use a good melting cheese sub, but I've never tried it with that. Or you can leave off the cheese--it's still pretty good without)
Ok, so get your skillet on med-high heat with about a tablespoon of olive oil. While it's preheating put the beans in a bowl and mash them slightly with a fork--set aside. Then, saute your garlic and onions in the oil until the onions are just starting to get soft (don't burn your garlic... if the pan's getting too hot, add a little water). Then, add beans, tomato, salsa, cumin, and chili powder. Cook for 5 to seven minutes (you want the chunks of tomatoes to break down a little), stirring almost constantly to make sure it doesn't burn on the bottom. Then, take off heat and stir in cheese--stir it in until it's all incorporated into the mix. Lastly, add your cilantro and lime juice and stir well. All done!
