It is 10:50 p.m. and I am boiling eggs.

"Why," you ask, "why, Aibhinn, are you boiling eggs at this time of night?"

The disingenuous answer is: "Because it was too hot to boil them in the daytime." (True, that; it was over 90 degrees F at one point in my apt. today.)

The answer you're really looking for is, "Because I'm going to a barbecue tomorrow and I'm bringing deviled eggs. And since I tend to stay up until 2 or 3, and then get up about noon, and I have to be there at 3 pm, I was either going to have to get up early (which would make me cranky for the fireworks), deal with hot eggs while I'm trying to slice and stuff them, or boil them tonight and put 'em in the fridge."

So Option 3 became my plan of attack. They've now finished cooking and are cooling off in ice water; tomorrow, they will become yummy halves of eggy deliciousness.

Mmmmmmmmmmmmmmmmmdeviledeggs.
