Your secret santa is still working away! So this elf has brought something to tide you over!:
Berry cheesecake (minis!)
You will need! 1 1/2 c. graham cracker crumbs (I use crushed teddygrams, actually!) 1/4 c. sugar 1/4 c. butter, melted 3 (8 oz.) pkg. cream cheese, softened 1 (14 oz.) can sweetened condensed milk 3 eggs 1 1/2 cups of berries (could be any kind) some more sugar to sweeten the berries (to your own taste!) a splash of lemon juice
Preheat oven to 300 degrees
Start the berries in a small pan with the sugar and the lemon juice. Cook until they start to fall apart, stirring occasionally (you can mash them too, to speed up the process). Set aside to cool.
Take the graham cracker crumbs and mix with butter and press into the bottom of your pan. I usually use muffin tins, but I think it'll work with a larger pan too.
In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs; mix well.
Put down a layer of the berry mix on top of the crust in the muffin cups.
Spoon equal amounts of cream cheese mixture (about 3 tablespoons) into the cups. Bake 20 minutes or until set. Cool. Chill.
