Meringue desert

Recently, I found this community foodclub_ru   on LJ and the first thing that jumped at my eyes was this meringue with dark beer chocolate cream desert recipe .  For a few weeks I tried to set time to do it and finally last night I did it!!!  I am very proud of myself!  It was an adventure for me.


I started pretty late after Michael’s soccer game and kids were “helping” me at first.  Once I put the meringue circles to bake in the oven, Boris and I gave bath to the kids and put them in beds.  Instead of winding down and going to sleep, I had to wait for my creation and finish it in a peaceful and quite house.

It turned out well, only I had some issues that I had to do extra steps to solve the problems.  The recipe suggested to add a lot of sugar, even though I added less sugar then it was suggested, it still turned out to be very sweet.  So, if I ever would do it again, I would need to keep in mind to use less sugar.

The chocolate cream was an interesting experience.  Dark beer and chocolate is an awesome idea.  As chocolate was melting in the boiling beer it smelled and tasted awesome!  However, as I started adding egg yolks, they started rolling into yucky pieces, so I had to get rid of those pieces by strain them off in colander (Strain off and colander are new English vocabulary words for me! learning something new every day! :)))).

Ok will try to translate the recipe:

You would need:

5 eggs, sugar, salt, lemon juice, vanilla, dark beer, dark chocolate and fruits for the topping or whatever you want to make it look pretty (I put sour cherry jam on).

To make meringue:

5 egg whites

2 spoons of lemon juice

Just some salt,

Drop of vanilla

Cup of sugar

Start with whipping the eggs, then add lemon juice, the vanilla, and then slowly add sugar as you are mixing it.  Mix for a few minutes until it is white and dense.

I used foil with some oil on it in the oven.  Make 4 circles from this white meringue mix, try to make them same size and make them somewhat thin.

Put it in the oven on 250F for  1 ½ hours.

Dark beer chocolate cream:

100 gram of chocolate

400 ml of dark beer

The recipe suggested to add 3 egg yolks but I am not sure about it because they just caused trouble.  May be wait until beer and chocolate are cold to add the yolkes.

Boil beer, add chocolate and let it melt (the smell was sooo good!!!) mix it up well.

The recipe suggested to add sugar, if you want you can add some, but chocolate that I used was already sweet, so I did not add sugar and it turned out very sweet anyway.

Once the meringue  is ready, put the chocolate on each circle and layer one over the other.  Decorate the top anyway you want.  Tuh Duh!

Here is the pic, it does not look very professional, because I am not...  but you can do it much better then I did!!!  Or maybe next time it will turn out better!
