I bought a cot, lantern, bug spray etc tonight for my first rough camping trip this weekend. I'm sharing a straight sided canopy/tent with a friend. I'm getting excited and nervous!

Meats wrapped in a foil packet and placed near (on the coals) or just under the fire can cook (if I'm recalling my Girl Scout days correctly...potatoes too).
Cut up some meats and veggies and bring some spikes to make kebab (easy to cook over an open fire)
If you don't mind the extra effort and have good arm strength, just bring a cast iron skillet and hold that sucker over the fire, then cook as normal ;) Dutch ovens are also extremely popular, esp for groups, but heavy bastards.
And you can always look at some foods that are acceptable for eating cold, if you have the cooler space. Tuna, PBJ, coldcuts, pre-cooked chicken (like strips to put in salads).

And seriously, a few meat cuts and a roll of foil (plus a few choice spices, like Spike!) will work for even just a firepit. You just have to keep checking the packets in the coals, and it could take time. Kebabs could be faster.
