My friend Case is preggers and all laid up with a narsty head cold, so I also made a batch of this stuff tonight.
1 lb. boneless, skinless, free-range chicken thighs, coarsely cubed.
1 EXTREMELY large yellow cooking onion, chopped.
32oz. Free Range chicken broth, and add water until fluid volume is 4 Qts.
2 WHOLE HEADS (not just cloves, whole heads) of organic garlic... or more. :)
4 bay leaves.
1 tsp thyme flakes.
1 tsp parsley flakes.
Salt and Pepper to taste.
1 cup each of very coarsely chopped carrots and celery.
Dump everything but the carrots and celery into stock pot. Simmer for an hour. Add veggies, and continue to simmer for another hour.
Serving suggestion: serve when clear of all other human population, or "other human population" will steer clear of you. :)
Reheating: Dish up desired amount... bring to boil in saucepan, add pastina (teensy tiny noodles) and a chopped tomato, reduce heat to medium, and cook 8-10 minutes until pastina is aldente.
