Recipe: Grits and Shrimp...

As I promised earlier on Twitter...

First of all, this recipe is definitely not for the overly health conscious or anyone trying to lose weight. I will be spending tomorrow at the gym.

Second, use long cooking grits. It won't work the same way or taste right with instant grits.




Grits and Shrimp

1 cup stone-ground grits
Salt and pepper
2 cups shredded sharp Cheddar cheese
1 pound shrimp, peeled and deveined, left whole if small and roughly chopped if medium or large
8 slices bacon
1 large garlic clove, minced
4 cups chicken broth

-Bring chicken broth to a boil in a medium saucepan. Add the grits and salt and pepper to taste.
-Stir well. A whisk works best. Reduce the heat to low and cook the grits until all the broth is absorbed, about 10 to 15 minutes. Stir occasionally to avoid lumps.
-Keep covered until ready to serve.
-Fry the bacon in a large sauce pan until browned and crisp, then drain on a paper towel.
-Pour off all but 2 tablespoons of bacon grease.
-Add the garlic and shrimp to the bacon grease in the pot and saute over medium heat until cooked.
-Crumble bacon and stir into grits.
-Pour grits and bacon mixture into the large sauce pan over shrimp and mix.
-Add shredded cheddar and mix thoroughly until cheese melts.
