So, this is what my day off culminated in.
Extremely easy.
Ingredients:
8 ounces Radiatore pasta
24 ounce jar vodka sauce (I like Classico but any brand will work.)
4 cups shredded Mozzarella cheese
1 pound Ricotta cheese
1 pound hot Italian sausage
Italian seasoned bread crumbs
Preheat oven to 400.
Cook pasta according to package direction and drain (over cook slightly since this will be baked).
Remove sausage casings and break up meat.
Cook the sausage meat thoroughly. Remove from heat and drain.
In a large bowl, mix the Ricotta into the sausage, then add the vodka sauce and mix thoroughly.
Stir in cooked pasta and toss.
Pour half the mixture into a deep casserole dish, cover with half the mozzarella.
Add the remaining mixture, cover with the remaining mozzarella.
Sprinkle breadcrumbs over the top.
Cover and bake at 400 for 1 hour.
