Baby Atticus is sleeping a few feet away from me so I figured this was as good a time as any to clack away at the keys.
Firstly, let me say I am completely taken with this kid. I know, I know this is supposed to happen with hormones and nursing etc.... I catch myself staring into his face and making googly eyes and the most ridiculous faces to get a reaction out of him. He smiles and coos at me as long as I am making eye contact and talking to him in an exaggerated way. He's brilliant!
The kids started school on Monday and because I have the good fortune to be a stay at home mom, I'm trying to be super homey. We are eating alot of home cooked meals at the moment. Whether it's Joe cooking or me, we've eaten out less this month than in previous months. The money that would have been spent on a meal out now goes toward random groceries like goat cheese or a really nice cut of beef and I find recipes to make. Last week I made a Mint Chocolate Ganache Cake, it seemed heavy on the mint but was very rich and tasty. Last night I learned how to make Bechamel sauce, which is sooooo easy to do and I had everything I needed to throw together a fancy, unusual dinner that we enjoyed. Anytime I can get kids to eat zucchini and squash without too much whining is a hit in my book.
In other news, we are trying to save up some funds to come home for the holidays or afterwards. I miss family and friends desperately and need to feel my native soil (or snow for that time of year) under my feet. Plus, my dad needs to see the newest addition to the clan. So, keep fingers crossed that we will be able to do this because the idea of not coming home for Christmas is killing. Even if we can't manage it until a week or so afterward, fine.....I'll take what I can get, no complaints here.
