Candied Yams recipe for thanksgiving

Nov 26, 2008 00:01

* 6 or 7 medium-sized Louisiana sweet potatoes
* 1 cup orange juice
* 1 cup raisins
* 1/2 cup butter
* 1 teaspoon cinnamon
* 1 cup brown sugar
* 1/2 cup rolled oats
* 1/4 cup raw blue agave nectar
* some amount of miniature marshmallows

1. Mix raisins into orange juice; let sit overnight.

2. Brush olive oil onto sweet potatoes; bake at 350 for 30 minutes. Mash.

3. Combine oats, sugar, and cinnamon.

4. Melt butter. Blend nectar with butter; blend oats/sugar/cinnamon into butter/nectar.

5. Blend mixture from #4 into mashed sweet potatoes. Add OJ/raisins to mixture.

6. Pour sweet potato mixture into pan; cover; bake at 325 degrees for... some amount of time. I'll probably bake for 30 minutes, check it, then add time in increments, as necessary.

7. Drive to my friends' place once the yams are cooked and the pan's cool enough to carry.

8. Uncover; pour miniature marshmallows on top and bake at 325 until lightly browned

Edited later to remind myself that I didn't combine the ingredients in the above order.
