resumes/references

I'm applying to work in a research lab, and I've been asked for a resume and "a couple of references."

Since this is not an "ordinary job" (like my current one of working in a library) and relies more on my mathematical background, should I change my resume to reflect this? If so, what should I include? (I'm an undergraduate.) Math/physics courses taken/grades in them? (This is a fluid dynamics lab.)

The math professor I was going to list as a reference recently left for Africa, but will return next semester. Is it okay to list him if I just drop him an email/leave a message on his phone that I will be doing so? Or should I consider a different professor?
