You know, Tuesdays, Thursdays, and Fridays used to be my favorite days. Especially Thursdays in fall. But now I realize because I work/have class/SGA/singers/choir/office hours for Bill on Tuesdays and Thursdays, my innate enjoyment of these days will be greatly reduced by the end of the semester. I'm a dunce.
An annotated bibliography on A Handmaid's Tale is due on Thursday afternoon for Marguerite, which I haven't started on, but at least I have a handful of sources already. All I need to do is look up online what the heck an annotated bibliography is, how to write one, and how do notate it, and I'll be fine...
I talked with Marguerite for nearly two hours yesterday, mostly about vegetarianism. She and Shakti have gone completely vegan over the summer (they used to have milk sometimes) and they also don't eat sugars that don't come directly from the fruits and vegetables they eat. They haven't had caffiene in years. She says they both have amazing energy and immune systems, and that they're both very healthy. Their doctor is still amazed that their protien levels are so perfect from soy, tofu, beans, and nuts. Marguerite also told me that there is SO MUCH sugar in the American diet--everything has some sugar in it for a preservative--that adversely affects your health. I guess they're on the Atkins for vegans diet ;) But, though I don't want to go whole vegan and cut out ALL sugars yet, but I do think only eating unrefined sugars is pretty wise. Whole breads and rice, organic sugar, honey, etc. The more we talked, the more excited about this Campus Vegetarians group Elise and I are going to start. Sure, it's just dinner at our place on Sunday nights for now, but I'd like to work toward changes on campus. Like fresh or frozen fruits and veggies in the caf--no canned stuff any more. And joining, what did Marguerite call it, the Walnut Valley BUying Group? It's a group of people who buy in bulk from the Fayetteville Farmer's Co-op and get group discounts on whole foods from buying together.
Which reminds me, I would love to write a cookbook/healthy eating book. Sure, I'm not the poster-child for healthiness, but the process of writing it would no doubt help me. All I know is, vegetarian eating is a huge source of interest for me, and surely it'll be cool to pursue. Even if I have to move to like, Seattle (vegan capitol extreme) to find the audience...
