I thought up a very tasty and easy way to cook chicken thighs tonight.
Ingredients:
juice and zest from one lime
a few cloves of garlic, crushed
small onion, finely chopped
some sage
some rosemary
dash of soy sauce
dash of lemon juice
glug of olive oil
glug of orange juice
8 boneless chicken thighs
Grease glass baking dish. Arrange chicken thighs in dish. Combine all other ingredients and pour/spoon over chicken. Bake at 225 C until chicken is cooked, about 40 minutes. Serve with rice.
