I wish I knew low-carb ways to prepare chicken thighs that were actually satisfying. My go-to meals would be "chicken smothered in onions" (onions are too high in carbs, considering how many of them I use in the recipe... and it seems like a sin not to put the caramelized goodness on top of mashed potatoes), gumbo (white rice is also high-carb), chicken'n'dumplin's (uh... pretty much nothing but white flour, spices, chicken broth, and chicken).
I may make some sort of chicken soup tomorrow, but I can't think of what to actually put into it other than chicken and broth... and maybe celery, carrots, and onions that I blitz (they're too mushy for me to enjoy on their own if I boil them, so I plan on blitzing them with an immersion blender and pray that they thicken the soup).
I guess I should look up some recipes. My other standard method involves spaghetti sauce, but that's 9g net carbs per 1/2 cup, which is far too much for my self-imposed starting limit of 25g/day. (...I probably ought to adjust that number to something like 40g and work my way down so I don't feel so limited at first.)
I hope to make some bacon/egg/cheese/onion omelet... thing with low carb ketchup later this week. (I may skip on the bacon, because the store price gives me a panic attack and I lost almost 3lbs during my "I'm not sure whether I should eat pork for spiritual or health reasons" struggle.) Eggs are on sale for $1.99 for 18, so I'll see how many packs I can manage to fit in my (shared) fridge this week and try to make some hardboiled eggs to eat as snacks.
I gave up on organic/free range eggs, because so many have had blood spots. (I cannot consume blood due to my religion. I also do not KNOWINGLY eat meat from a strangled animal, flesh that was butchered while the animal was still alive, raw meat -- though that's because I don't like sushi, or meat from an animal that still served a useful purpose -- such as wool, milk, eggs, or breeding -- UNLESS in "lean times" or there's an overabundance and the animals cannot be sold.)
