As for a reel: basically, yeah, just a bunch of scenes or scenelets back to back. Maybe a liiiittle intro montage if you've got the footage... (some actors try to turn their whole reel into a sort of flashy 'music video', which is clear proof that they have no good scenes to show.) No longer than three-four minutes. As for format, simple is best: your name and contact info at the beginning and end, clips in the middle, and maybe caption the clips as they come up (e.g. "Pat Gets a Cat, Northwestern University"). Lead off with your strongest material, and of course pick scenes that focus on you; minimal context, maximal you-presence. Variety is good, and ideally you will be able to pick scenes that lead off showing you--you wouldn't want to begin your reel with a closeup of some random guy.
Honestly, you can probably get an idea just by looking at other actor demo reels and seeing what works and what doesn't. (Google, maybe YouTube search?) When the time comes I would be happy to provide my video editing skillz--but then it occurs to me that you could probably do it yourself with iMovie, a good eye and a spare half-hour.
