Where's the beef? Part 2

Sorry for the avalanche of posts. I've been doing a good bit of cooking and taking pictures and am now trying to clear the memory card in my camera.

Re-purposing leftovers into new and exciting dishes can be a fun challenge. I started out with half a New York Strip steak and a bake potato from the bbq and ended up with this.

Thank you so much. The strawberry mousse you made looks so tempting but I'm really in the mood for sorbet right now. That reminds me, I have to go downstairs and put the canister in the freezer right NOW!!

What a creative way to use left overs Maria. My mom had an amazing recipe for potatoes that would work with your leftovers too...she cubed them, just like you did, added a good splash of chicken stock and about a tablespoon of paprika. I think she may have had a diced onion in it too. It was so delicious!

I'm sure the chicken stock is a much healthier way of reheating the potatoes than using butter or oil, maybe a combination of the two would be even better, but I rarely have just a bit of stock on hand when I want to do this. And I always have butter and oil around. :) Plus it helps with the browning.

The potatoes look crispy outside and I love it. I'm such a big potato fan and very picky about how it's cooked. This is nice! Sandwich looks delicious too!

Thank you. It's a fast dish as I bake the unpeeled potatoes in the microwave til tender inside and then finish them off in a frying pan. It was all very tasty.

PS: I had a chance to check out your blog. Some pretty amazing cooking going on there, girl. :) And your cake submissions a while back were very tasty looking even though I'm trying to lose beaucoup pounds so I do NOT need to be making cakes ... when it's ice cream season!!!
