Thoughts on Kneading, Pizza and Gulab Jamun

I decided to make a pizza for supper today and while kneading was reminded again of the quest for a no-knead bread recipe which comes up periodically on food blogs and LJ posts.

I don't really understand why kneading is considered to be such a chore. It usually only takes about 10 minutes, certainly less than 15 minutes and the time spent can be used for other purposes. You can vent your frustrations by beating up on that pliable ball of dough, meditate on problems that have puzzled you, boogie to your favourite tunes on the radio or cd player, or just plan tomorrow's meal or your next grocery shopping trip. You can even work through a plot point in your story if you write fanfiction.

And at the end, you have a ball of elastic dough ready to be put aside to rise for a loaf of bread, coffee cake or pizza.

Here's the white pizza (fresh rosemary steeped in extra virgin olive oil, caramelized onions, prosciutto and goat cheese) made with the dough that I produced while thinking about the issue of kneading just before putting it into the oven. :)




And, the Indian sweet (gulab jamun - dough balls fried and then soaked in a cardamom flavoured sugar syrup)  below ... well, my nephew made them this weekend. I wish I could take credit for his cooking skills but he seems to have developed them independently of either his family or mine. :)
