Secret Matcha Crepe Project

I have a problem with delayed gratification so, rather than waiting til tomorrow, I had to do the reveal after a brief 1 hour wait. Haste makes waste is a cliche but then, cliches are so often based on truth. It still tastes REALLY REALLY good though. :)

I thought the cake was too short so I stacked the 2 halves on top of each other, forgetting to spread filling between the 2 halves.

Things I learned:

1. Add 2 tbsp sugar to the basic crepe recipe.

The vanilla pastry cream filling and whipping cream did not add sufficient sweetness to balance the 8 very mildly sweetened crepes used to make this cake.

2. Be less generous with the amount of whipping cream lightened vanilla pastry cream so you'll have enough to distribute among all the layers.

3. Do NOT directly cover the cake with saran wrap when refrigerating. Moisture accumulated under the wrapping so that when the icing sugar was sprinkled on top to decorate the cake, it was absorbed by the moisture. (I wonder whether covering with a layers of paper towel before covering with the saran wrap would solve that problem.)

4. Let the cake set at least overnight before trying to cut into it.

5. A 8-layer cake is just as tasty as an 16-layer cake and is easier to cut and eat. :)
