Rum and Raisin Dark Chocolate Truffles

I took this basic dark chocolate rum truffle recipe and adapted it to include raisins and voila! Rum and Raisin Dark Chocolate Truffles. The chocolate used was a 77% cocoa solids bar from Belgium.

Oh, I LOVE truffles! Doesn't ganache take FOREVER to set though. I always forget this when I'm making something and have to wait so long! Rum and raisin is ony of my favourite taste combos too - so good in ice-cream. Looking forward to seeing more truffle recipes :D Still want photos though!!!

The dark and milk chocolate ganaches set pretty quickly compared to the white chocolate ones. In fact, I've seen where they have to be put in the freezer. The proportion of cream to chocolate is lower as well for the white chocolate.

My mom's favourite ice cream flavour used to be rum and raisin. They don't make that flavour any more. When I was thinking of doing something with rum, the raisin came immediately to mind. A camera isn't high on my priority list. I bought myself a sewing machine for Xmas a couple of months ago (and a snazzy new garnet winter coat) so it's not going to happen for quite a while. :)

Heheh I'm visual person too, so I'm requesting photos following Charles's request. ;-) My mom used to make rum and raisins dark chocolate truffles that I totally forgot about until I saw your post. It sounds delicious. I'm sure it "looks" delicious too! I'm sure you make beautiful truffles!

Maybe I can ask my nephew to bring his camera and snap some pictures when he comes over next time. He just left a few minutes ago after a visit (he's home for the holidays) and we're planning our outings. :)

55 ... 56 in February. I'm a pre-Valentine's day baby. :) And he's old enough to buy his own drink and drive his aunt around during the holidays.

Your truffles sound excellent! They must be all soft and rumy... Please don't make me crave more chocolate! I have already had too many sweets recently. Sissi

The dark chocolate truffles are firm out of the fridge and should be left to sit at room temperature for at least half an hour before eating so they'll soften while the white chocolate ones are much softer due to the lack of cocoa solids in white chocolate and can be eaten directly out of the fridge. They soften pretty quickly.

I want to make SO many different variations now.

I'm thinking chopped candy canes or cranberries mixed into the white chocolate ones, or egg nog spices mixed into milk chocolate chocolate. I also want to do a dark chocolate mixed with raspberry jam and raspberry liquor. Or a chopped candied orange peel and Grand Marnier liqueur mixed into white, milk or dark chocolate. Honestly, once you have the proportion of cream/butter to shaved chocolate down, you can make an endless variety of truffle flavours. And you don't have to coat them in chocolate unless you have lots of time on your hands or extra help. :)

The truffles must have been wonderful, it's too bad you can't post a photo of them. My friend in Burlington makes hundreds of truffles every year for gifts; home made truffles are the best!

My nephew had medical tests scheduled today and is going to London to shop for a new car with his dad tomorrow so I'm afraid no pictures would be possible til Saturday at the earliest. I don't know if the truffles would last that long though I can always make some more, of course. :)

They're not in danger of MY eating them ... I've only had about 4 or 5 ... but I want to give them away. Fortunately/unfortunately, I haven't been working so the temptation to take them to work and leave them in the staff room hasn't had to be resisted. I actually want to get rid of them so I can make some different flavours, or try making coated ones. :)
