Tomato and Egg Stir Fry - Chinese Style

Recently, this dish has been popping up all over my Facebook food groups. It is similar to shakshuka but with Asian flavours. I used the recipe here. The only change I made was to add 1/4 tsp ground ginger to the tomato mixture while simmering.

I recently heard about something called "golden rice" - where you coat the rice in the egg yolk first, and then fry it with the rest of your veggies - have you ever heard of that? It sounded interesting!

I ran across the cooking/recipe term a while ago and, of course, had to look it up. Youtube is a great resource. :)

It's used in making fried rice. The yolks are stirred into the cold rice first and set aside. Then, the veggies are cooked and when done, the 'golden rice' is added to finish up the dish.

PS: There's also a strain of rice called golden rice.

I wish I could, but TBG would never eat this combination. he's very fussy about eggs and tomatoes.

That's a shame. It's pretty good.

How about a hard-boiled egg in a tomato curry sauce? :)

Nope, he doesn't like the combination of egg and tomato. It's one of the few things he really dislikes, so I just don't.
