Wow, that's a great meal. Jeff did lamb chops, roasted potatoes and asparagus with carrot cake for dessert. I was stuffed by the end of the meal! :D

I would have been stuffed too. Sounds like a great meal. Was there pineapple in the carrot cake? :)

Nope, no pineapple. The cream cheese frosting was way too much for me. I just like a regular carrot cake without frosting.

For years I had heard about this 'carrot cake' thing and I was leery of trying it out. It was the addition of crushed pineapple in a recipe I saw on one of the tv cooking shows that finally tempted me to make it. So I did ... actually, I made carrot cupcakes and put cream cheese frosting on top. Loved it. :)

I like carrot cake well enough, but the frosting is just too sweet for me. I'm glad you tried it, though.
