A hearty 'morning after' breakfast full of protein and assembled from odds and ends. This is a combination of two classic Mexican dishes, chilaquiles and migas, so I called it "ChilaMigas".
I cooked up 500 gm of dried red kidney beans and got a good 5 cups of refried beans from them. If avocados weren't $1.50 each for a smallish avocado, I would have had some to put on my meal as well. :)
I wish I were as well. Especially today as I'm shovelling snow. I gave up after doing the front and called my 'snow guy'. Hopefully, I won't have to do that again this week. :)
