Sourdough Thin Crust Pizza Dough

A recent request by someone on one of my FB groups for a thin crust pizza recipe got me thinking.

I've made a delicious thin crust pizza using sourdough tortillas as a base but, was it possible to use the sourdough starter directly to get similar results?

Mmmm, now I want pizza! I have a pretty good recipe for pizza crust, but this one looks way easier.

Easier ... if you have a bunch of sourdough starter to throw in. You don't really need an active starter as you're not depending on the yeast to give your crust rise, just flavour. Interesting to see all the trapped CO2 gas in the dough bubble up though. :)

You can try making a kind of cheater's sourdough by combining 100 gm flour and 100 gm water with 1/4 tsp dry yeast in a bowl that you can cover with saran wrap. Let it sit on the counter overnight in a warmish place. It should be bubbly.

The next day (24 hrs at least) give it a good stir and add another 100 gm flour and 100 gm water, cover. On the 2nd day you should have something that's nice and bubbly ... similar to a starter. If it's not quite as active as you'd like stir in just another 50 gm flour and 50 gm water and give it another 12 hrs. Measure out 1 1/2 cups of this sourdough 'starter' and follow the recipe. It's not as easy as the above but about the best you can do.

It SOUNDS like it would work. I've done something similar in making 'fake' sourdough dinner rolls. :)

Hope you enjoy either of the dishes. The burgers were particularly fun to throw together especially in the winter when grilling on the bbq isn't an option.
